The 2004 FDA Report of the Occurrence of Foodborne Illness Risk Factors in Selected Institutional Foodservice, Restaurants, and Retail Food Store Facility Types summarizes the results from the second data collection period conducted in 2003. The results contained in this report provide insight into the effectiveness of industry management systems and food safety regulatory programs in controlling foodborne illness risk factors in certain retail food and foodservice operations.

This report should be read and the data interpreted as a stand-alone report. Additional data are needed before any meaningful assessments of trends can be made for each of the facility types. This report makes no attempt to draw comparisons between the results of the 1998 and 2003 data collections.
