Speaker's Notes

Use of an inspection form that directs the inspector to routinely document the compliance status (IN, OUT, Not Observed, Not Applicable) for food safety practices and employee behaviors related to the risk factors is recommended. Staff should be equipped with other necessary inspection tools, such as accurate temperature measuring devices (thermocouples) and sanitizer test kits, to assess an establishments compliance with the control of foodborne illness risk factors.
