Using the results of the 1998 data collection, the 2000 Report of the FDA Retail Food Database of Foodborne Illness Risk Factors established the first-ever national baseline on the occurrence of foodborne illness risk factors within institutional foodservice, restaurant, and retail food store facility types.

Using the results from the 1998 data collection as a baseline, FDA's Natioanl Retail Food Steering Committee has established a goal of reducing the Out of Compliance percentage of observations of the original 42 data items related to foodborne illness risk factors in institutional foodservice, restaurants, and retail food store facility types by 25% by 2010
