Speaker's Notes

To assist industry in the development of food safety management systems designed to control foodborne illness risk factors, FDA has developed a guidance document, Managing Food Safety: A Guide for Voluntary Use of HACCP Principles for Operators of Food Service and Retail Establishments. The FDA work directly with the Conference for Food Protection to obtain review and input from industry and regulatory food safety professionals around the country.
