Many State and local regulatory agencies are planning to conduct similar foodborne illness risk factor studies within their jurisdictions. Their intention is to establish performance measures and improvement goals specific to their retail food protection program. To assist them in the planning process, FDA tracked the actual time spent in each of inspected establishments.

An average actual time per inspection was obtained for each of the 9 facility types. Travel time and off-site report preparation were not included in the FDA time assessment. Only the actual inspection time at the facility is included in the average.
