Speaker's Notes

The data collection form used for the study contains a section of supplemental data items. These additional items were added in an effort to assess some industry food safety practices not addressed in the first report and also assess the impact any Food Code changes may have on the compliance percentages presented in the Report. Only a couple of data items within the original study contain criteria or critical limits that have been changed since the release of the 1997 Food Code.
