Speaker's Notes

The FDA 2004 Report, like all scientific reports, includes some discussion of its own limitations. Two limitations were imposed by the nature of the inspection process.

First the timing of the inspection could not always coincide with some of the procedure we wanted to observe, such as an establishments receiving potentially hazardous foods from their suppliers OR end-of-the-day breakdown and storage of potentially hazardous foods.

Second, we had to limit the length of our inspections. We didn't always have enough time to spend several hours verifying the cooling process for foods that had been cooked or reheated.
