This presentation will provide information on the purpose and scope of the 2004 FDA Report on the Occurrence of Foodborne Illness Risk Factors in Selected Institutional Foodservice, Restaurant, and Retail Food Stoe Facility Types
The results contained the FDA 2004 Report are part of a larger long-term effort to observe and document food safety practices and employee behaviors that have the potential to contribute to foodborne illness. In order to interpret and use the results presented, one will need to understand what the study is designed to cover and what it is not designed to do.
The presentation will cover:
The methodology for collecting the data;
How the data was analyzed;
How IN Compliance and Out of Compliance percentages are determined and what they refer to; and
- Recommendations for both regulatory and industry food safety professionals for enhancing the effectiveness of the nation's foodservice and retail food protection system
