METHODOLOGY




Speaker's Notes

This research project is actually nine separate studies. One for each of the nine facility types. Due to the different food products and processes that will be found in each of these facility types, it is inappropriate to make comparisons between them.

The nine facility types were chosen from three industry segments: Institutional Foodservice, Restaurants and Retail Food Stores. The segments were chosen because they represented both general and highly susceptible populations and they incorporated the overwhelming majority of establishments we find at the foodservice and retail level - over a million varied and diverse establishments.

Of the nine facility types, three were associated with institutional foodservice:

Hospitals
Nursing Homes and
Elementary Schools (K through 5)
